Summer Berry Ginger Lemonade
1 cup fresh blackberries
1 cup fresh raspberries
(or 2 cups frozen mixed berries, thawed)
1/2 cup sugar
1 cup water
1 cup lemon juice
4 cups water
1/4 cup Olives en folie Blackberry Ginger Balsamic Vinegar
In a food processor, blend together the blackberries and raspberries until smooth. Place a medium mesh sieve over a bowl and press the berry mixture through it to remove the seeds.
In a medium saucepan, combine the sugar and 1 cup of water. Heat over a medium heat, stirring, until the sugar has dissolved. Set aside to cool.
Combine the lemon juice and 4 cups of water in a pitcher. Mix in the cooled sugar syrup, the berry puree and the Blackberry Ginger Balsamic Vinegar. Stir well. Taste and add more water (to dilute) or more lemon juice and Blackberry Ginger Balsamic Vinegar (to make it more tart).
Add ice just before serving and garnish with lemon slices and fresh berries.
