Ingredients:
Salad
1 1/2 cups cooked quinoa
1/4 small red onion
1/2 red bell pepper
3/4 cup shredded coconut
3/4 cup flaked almonds
1 cup raisins
1 cup edamame, shelled
1/4 cup cilantro, chopped
Dressing
2 tablespoons Olives en folie Persian Lime Olive Oil
2 tablespoons Olives en folie Chili Balsamic Vinegar
Directions:
Whisk together all the ingredients in a small bowl.
Finely chop the onion and bell pepper. In a large bowl, toss together all the salad ingredients, including the quinoa.
Add the dressing, toss the salad well and serve cold.
