Avocado Caprese Chicken
2 chicken breasts, butterflied and halved
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon Italian seasoning
2 tablespoons Olives en folie Basil Olive Oil
6 oz fresh mozzarella
4 avocado slices
2 medium tomatoes
3 tablespoon Modena 25 Star Dark Balsamic Vinegar or Modena 25 Star Dark Balsamic (Organic)
1/3 cup chopped basil
In a bowl mix together the garlic powder, onion powder, seasoning and a little salt and pepper. Sprinkle the mixture over both sides of each chicken breast.
Heat the Basil Olive Oil in a skillet over a medium-high heat. Add the chicken and cook until both sides are golden brown (about 4 - 6 minutes).
Reduce the heat slightly and cook for another 4 - 5 minutes until the chicken is cooked through. Remove from the heat.
Add two slices of mozzarella to the top of each breast, followed by one avocado slice, then 1 or 2 tomato slices. Cover the pan with a lid and return to the heat. Allow to cook for 1 - 2 minutes longer, or until the cheese has melted.
Drizzle the chicken with Modena 25 Star Dark Balsamic Vinegar and garnish with fresh basil.
