Fig Compote


2 dried figs, chopped

1 tablespoon Olives en folie Cabernet Sauvignon Wine Vinegar, 

2 tablespoons sugar

1 1/2 cups water

2 tablespoons Olives en folie Fig Balsamic Vinegar (or try Apricot Balsamic Vinegar!)

Salt and pepper, to taste


In a medium pot, combine the figs, Wine Vinegar, sugar and water. Bring to the boil over a medium heat, then allow to simmer partially covered for about 20 minutes, stirring occasionally. 

Add the Fig Balsamic Vinegar and simmer, uncovered, for another 5 or so minutes or until the mixture is syrupy. 

Season with salt and pepper, and serve mixed through a grain salad or over roast meats!
